INGREDIENTS

INSTRUCTIONS

Olive oil (or avocado oil) — 2 tbsp

Lemon juice (or vinegar if you got that) — 1 tbsp

Salt — 1 tsp

Black pepper — 1/2 tsp

Garlic powder — 1/2 tsp

Paprika (smoked if you got it) — 1/2 tsp


Optional:

Cumin or dried herbs — pinch

Honey, maple syrup, or sugar — to taste

Worcestershire sauce — 1 tsp (for some umami)

Coconut aminos (sweet-savory) — 1 tbsp

Peri peri sauce (more if you like it spicy) — 1 tsp

  1. Mix all ingredients in a bowl or zip-top bag.

  2. Add chicken and coat well.

  3. Let it sit at least 15 minutes, or up to 24 hours in the fridge.

  4. Cook how you want: pan-seared, baked, air fried, or grilled — all work.

NOTES

  • Use chicken thighs for max flavor and juiciness.

  • Double the recipe and freeze half the raw chicken in marinade for later.

  • Add fresh herbs like rosemary or parsley right before cooking for a pop.

  • Want it creamier? Add a spoonful of Greek yogurt to the marinade.

  • Don’t skip the coconut aminos if you can help it — game changer.

  • This works great with tofu too — just press it first to get the liquid out.
