INGREDIENTS
INSTRUCTIONS
Olive oil (or avocado oil) — 2 tbsp
Lemon juice (or vinegar if you got that) — 1 tbsp
Salt — 1 tsp
Black pepper — 1/2 tsp
Garlic powder — 1/2 tsp
Paprika (smoked if you got it) — 1/2 tsp
Optional:
Cumin or dried herbs — pinch
Honey, maple syrup, or sugar — to taste
Worcestershire sauce — 1 tsp (for some umami)
Coconut aminos (sweet-savory) — 1 tbsp
Peri peri sauce (more if you like it spicy) — 1 tsp
Mix all ingredients in a bowl or zip-top bag.
Add chicken and coat well.
Let it sit at least 15 minutes, or up to 24 hours in the fridge.
Cook how you want: pan-seared, baked, air fried, or grilled — all work.
NOTES
Use chicken thighs for max flavor and juiciness.
Double the recipe and freeze half the raw chicken in marinade for later.
Add fresh herbs like rosemary or parsley right before cooking for a pop.
Want it creamier? Add a spoonful of Greek yogurt to the marinade.
Don’t skip the coconut aminos if you can help it — game changer.
