INGREDIENTS

INSTRUCTIONS

Butternut squash: 1 large, peeled and cubed

Olive oil or butter: 2 tbsp

Onion: 1 small, chopped

Garlic: 2 cloves, minced

Carrot: 1, chopped (optional for extra sweetness)

Vegetable or chicken broth: 4 cups

Coconut milk or cream: ½–1 cup

Salt: to taste

Black pepper: to taste


Optional:

Nutmeg or cinnamon: pinch

Fresh herbs: garnish

1. Sauté base

In a pot, heat oil or butter.

Cook onion and carrot until softened.


2. Add garlic

Add garlic and cook for 30 seconds.


3. Simmer

Add squash and broth.

Simmer 20–25 minutes until squash is tender.


4. Blend

Blend until smooth using an immersion blender or regular blender.


5. Finish

Stir in coconut milk or cream.

Season to taste.


6. Serve

Serve warm with optional herbs or a drizzle of cream.

NOTES

Roast the squash first for deeper flavor (optional upgrade 🔥)

Use coconut milk for dairy-free richness

Blend fully smooth for best texture
