INGREDIENTS

INSTRUCTIONS

Onions (yellow or sweet): 2–3 large

Olive oil: 1–2 tbsp

Salt: to taste

Black pepper: to taste

1. Preheat

Preheat oven to 400°F.


2. Prep onions

Peel and cut onions into halves or thirds (your instinct = correct 🔥).

Place cut-side up on a baking sheet.


3. Season

Drizzle with olive oil.

Sprinkle with salt and pepper.


4. Roast

Roast for 30–40 minutes until soft and caramelized at the edges.


5. Serve

Serve warm as a side or add to bowls, meats, or grains.

NOTES

Cutting into thirds = faster cook + more caramelization (smart move)

Don’t overcrowd the pan

Add a splash of balsamic at the end for depth

Roast longer for deeper sweetness
