INGREDIENTS

INSTRUCTIONS

Oats: 1 cup

Cashews (or nuts of choice): 1/2 cup

Peanut butter (or almond butter): 1/2 cup

Honey or maple syrup: 1/4 cup

Protein powder (vanilla or chocolate): 1/2 cup

Dark chocolate chips: 1/4 cup

Coconut water: 1–2 tablespoons (as needed)

  1. Grind the cashews in a blender or food processor until finely chopped.

  2. Add the oats and pulse lightly, keeping some texture.

  3. Add peanut butter, honey, and 1 tablespoon of coconut water. Mix until a sticky dough forms.

  4. Add the protein powder and chocolate chips. Mix until fully combined. Add another tablespoon of coconut water if needed to bring the dough together.

  5. Line an 8x8 inch dish with parchment paper.

  6. Press the mixture firmly and evenly into the dish.

  7. Refrigerate for 1–2 hours until firm.

    1. Lift out using the parchment paper and cut into bars or squares.

NOTES

  • Press the mixture down firmly so the bars hold together well.

  • If the mixture feels too dry, add a little more peanut butter or coconut water.

  • Store in the fridge for best texture.

  • Freeze extras for a longer-lasting snack.

  • Try swapping nuts or adding cinnamon or sea salt for variation.
