INGREDIENTS

INSTRUCTIONS

Egg: 1 (room temperature)

Neutral oil (avocado or light olive oil): 1 cup

Lemon juice or vinegar: 1 tbsp

Dijon mustard: 1 tsp

Salt: ½ tsp

1. Add base ingredients

In a jar or tall container, add egg, lemon juice, mustard, and salt.


2. Blend

Using an immersion blender, blend while slowly adding oil.

👉 Start at the bottom and let it emulsify before moving upward.


3. Finish

Blend until thick and creamy.

Taste and adjust salt or lemon as needed.


4. Store

Store in the fridge for up to 3–5 days.

NOTES

Room temp egg = better emulsification

Add oil slowly for best texture

If it breaks, blend in another egg to fix it

Use avocado oil for neutral flavor
