INGREDIENTS
INSTRUCTIONS
Chicken breasts (boneless, skinless): 2
Carrots: 1 cup, diced
Zucchini: 1 cup, diced
Butternut squash: 1 cup, diced
Onion: 1 small, diced (optional)
Chicken broth: 4 cups
Almond milk (unsweetened): 1 cup (optional)
Garlic: 2 cloves, minced
Turmeric: ½ tsp
Ground ginger: ½ tsp
Salt: to taste
Black pepper: to taste
1. Sauté garlic
Set Instant Pot to Sauté.
Cook garlic with a small amount of oil until fragrant.
2. Add everything
Add chicken, vegetables, broth, turmeric, ginger, salt, and pepper.
3. Pressure cook
Seal lid and cook on High Pressure for 12 minutes.
Let natural release for 10 minutes.
4. Shred
Remove chicken and shred with forks.
Return to soup.
5. Blend (optional)
Blend part or all of the soup for a smoother texture.
6. Finish
Stir in almond milk if using.
Adjust seasoning and serve warm.
NOTES
Blend more = easier to eat
Skip onion for ultra-gentle digestion
Add extra broth if you want it thinner
Great for meal prep and reheats beautifully
