INGREDIENTS

INSTRUCTIONS

Ground meat (beef, turkey, chicken, or lamb): 1 lb

Yellow onion: 1 large, finely chopped

Garlic: 3 cloves, minced

Ginger: 1 inch, minced


Crushed tomatoes: 2 cups

Tomato paste: 2 tablespoons


Curry powder: 1 tablespoon

Cumin: 1 teaspoon

Coriander: 1 teaspoon

Turmeric: 1 teaspoon

Chili powder (optional): 1/2 teaspoon

Cinnamon (optional): 1/2 teaspoon


Coconut milk or heavy cream (optional): 1 cup

Water or broth: 1 cup

Oil: 2 tablespoons

Salt: to taste

Black pepper: to taste

Cilantro (optional): for garnish

  1. Heat oil in a large pan over medium heat.

  2. Add chopped onion and cook for 5–7 minutes until soft and translucent.

  3. Add garlic and ginger, cooking for 1–2 minutes until fragrant.

  4. Add ground meat and cook until browned, breaking it apart as it cooks.

  5. Stir in curry powder, cumin, coriander, turmeric, chili powder, and cinnamon. Cook for 1–2 minutes to bloom the spices.

  6. Add crushed tomatoes and tomato paste. Stir to combine.

  7. Pour in water or broth and bring to a simmer. Cook for 15–20 minutes, stirring occasionally.

  8. Stir in coconut milk or cream if using, and simmer for another 5 minutes.

  9. Season with salt and pepper. Garnish with cilantro if desired.

NOTES

  • Letting the spices cook before adding liquid builds deeper flavor.

  • Coconut milk adds richness; broth keeps it lighter.

  • Great for meal prep—flavor improves over time.

  • Works over rice, pasta, or in wraps.

  • Add a spoon of yogurt on top for extra balance.
