Potatoes: 2–3 medium
Butter or oil: 1–2 tablespoons
Salt: to taste
Black pepper (optional): to taste
Onion (optional): 1/4 cup, chopped
Bell pepper (optional): 1/4 cup, chopped
Wash and dice the potatoes into small, even cubes (about 1/2 inch or smaller).
Heat butter or oil in a skillet over medium heat.
Add the potatoes and sprinkle with salt.
Cover the pan and cook for 5–7 minutes to soften the inside.
Remove the lid and let the potatoes cook uncovered.
Allow them to sit undisturbed for a few minutes to develop a crispy crust.
Stir occasionally, cooking until all sides are golden and crispy.
Add onion and bell pepper (if using) during the last few minutes of cooking.
Season with additional salt and pepper to taste and serve warm.
NOTES
Cutting the potatoes small and evenly is key for even cooking.
Don’t overcrowd the pan—this helps them crisp instead of steam.
Let them sit without stirring at first to build a golden crust.
Add garlic, paprika, or herbs for extra flavor.
