The Rice I Keep Coming Back To

There’s something quietly comforting about having a pot of rice ready to go.

Not because it’s fancy.

Not because it takes a lot of effort.

But because it’s reliable.

This Instant Pot rice has become one of those small things I come back to again and again. It’s simple, consistent, and always there when I need a base for something nourishing.

On days when I don’t feel like overthinking food, this is where I start.

I’ll make a batch, let the steam settle, and suddenly I have something I can build from. Chicken, beans, vegetables—whatever I have on hand starts to feel like a meal again.

It’s one of those recipes that doesn’t ask much of you, but gives a lot back.

If you’re looking for something easy to keep in your rotation, this is a good place to begin.
